Easy Tomato - Mozzarella Bruschetta
The Italian cuisine is one of my all time favourites. It might be because my dad used to travel to Italy a lot when I was little and tortellini were as common in our house as bread. Or it might be because I am just utterly in love with their language and cinema. Whatever the reason might be, one thing is for sure: if I were to only have one dish for the rest of my life, that dish would definitely be penne with pesto. And if I could add a starter to that, it would be the tomato mozzarella bruschetta. It´s definitely not a dish you need a recipe for, but I´ve put some instructions together for the very beginners anyway.
Tomato - Mozzarella Bruschetta Recipe
(serves 2 or one very hungry person)
two loaves of bread
half a mozzarella (ideally di bufala)
olive oil (with low acidity)
salt and pepper
1. Cut the tomato in small cubes and the mozzarella in slices. Put the mozzarella slices on the bread first (trust me, I´ve also tried tomato first and this is much better!) and then the tomato.
2. Put them in a preheated oven at 180 degrees for 10 minutes. Once they´re done, season with the salt, pepper, olive oil and the small cut basil leaves. Enjoy while warm since there´s no better thing in the world such as melted cheese!
