Green Curry and Peas Purée with Salmon in the Oven

We´ve been in the new house for two weeks now and I still can´t quite decide what my favourite part of it is. The balcony kind of ties with the kitchen and with the dining area. Fact is that I absolutely love cooking in our new kitchen and I can smell some new crazy recipes coming up soon. As for this #homemadeMonday, I chose a simple yet delicious green curry and peas purée with salmon in the oven. The prep is minimal, the recipe is delicious and healthy and before you tell me you don´t like green peas, let me tell you that you´ll love these. Here goes.




Ingredients

(serves two)


500g canned green peas

250g greek yogurt

1,5 tsp green curry paste

1/2 tsp salt

1/2 tsp black pepper


two salmon fillets

1 tsp sumac

1 tsp ras el hanout



Instructions


1. Mash the green peas in a blender with the help of a teaspoon of olive oil. Gradually add the greek yogurt and the green curry paste. Taste and season with salt and pepper.




2. Preheat the oven at 180 degrees while you prepare the salmon. Mix the sumac and the ras al hanout and rub the seasoning into the salmon.



3. Place the salmon in an oven proof pan and sprinkle a bit of olive oil on it before adding it to the oven. Let it cook for 20 minutes.




4. A couple of minutes before removing the salmon from the oven warm up your peas purée in a little pan.
