Salmon Steak & Oven Sweet Potatoes


This one is a favorite of mine for chilly autumn days when I want a healthy but hearty meal, quick and easy to make.


It almost does not require any other ingredients, except the ones mentioned in the title and some basic spices & olive oil, which I always have at home.


Step 1: while you wash and cut 1 sweet potato in cubes, pre heat the oven at 200 degrees Celsius. Place the potato cubes on an oven tray which you cover with baking paper.


Step 2: sprinkle the sweet potato cubes with olive oil, salt, pepper, rosemary and any other spices you like (i always like to use a bit of turmeric, curry, dried coriander, maybe some mix of Italian herbs).


Step 3: place the tray in the oven and keep an eye on it, after about 5-10 minutes briefly open the oven and turn the potato cubes around so they bake on all sides.


Step 4: sprinkle the piece of salmon steak with a bit of salt and pepper and place it on a hot pan on the stove. Don’t use any oil as the fish is super oily and will leave a lot of his own oil in the pan.


Step 5: the salmon steak needs to fry for about 3-4 min on each side, until it has that pink golden color with a touch of crisp. When you take it out of the pan, place it on a kitchen paper and leave it for 1 min on each side to absorb the extra oil.


Step 6: take the potatoes out of the oven (you can try them with a fork to see when they’re ready) and serve together on a plate, accompanied by a glass of red wine and maybe a simple rucola & cherry tomatoes salad on the side.
